What did I eat? Fake “Salmon” gnocchi

I’ve been unemployed for over a year ’cause the multi-billion dollar company I long worked for didn’t renew my contract. They told me that “unfortunately” due to covid-19 they’re not hiring at the moment. Although I don’t have much money left, I still want to impress my girlfriend with some fancy salmon, so we went to the nearest Lidl and got the deluxe salmon gnocchi!

After cooking them with a little bit of ricotta for the first time, I realized they didn’t really taste of salmon at all. To be honest, I didn’t read the back of the packaging where it said there was just 6% of salmon paste inside those gnocchi, I thought that if I had to cook them nicely, I had to spice them up and add mushrooms, veggies and cheeses.

I decided to cook the remaining gnocchi with frozen Freshona mushrooms, added two types of bluecheese (spicy and sweet) put some bietola, and stay true to the sicilian saying ” I maccarruni su chiddi ca l’inchiunu a panza”.

Anyway, the cooking was simple.
Turn on the flame and melt butter on the pan.
Just defrost the mushrooms under warm water if they’re frozen as block, start to cook them under a lid, in the meanwhile cut the bietola and put the maccheroni pasta in the pot if the water is already boiling.
Let the bietola and mushrooms cook together for 4-5 minutes, then put as much bluecheese as you want on it, cut another tiny bit of butter and add a half a mestolo of cooked water to the saucepan.

Don’t forget the gnocchi gotta stay in boiling water for 1 minute. Take them out afterwards and slice them in half if you’re cooking the same ones I got fooled with, and put them in the saucepan.
Once the maccheroni are al dente, put them in the saucepan too, add some parmisan if you have it, then let it cook on medium flame if there’s a lot of water yet to be absorbed, then low flame for a couple more minutes, turn it off now and let it settle..
Crack some nuts if you’re vegetarian, need protein, or you just wanna keep it crispy.

What did I eat? – Basmati rice with veggies

Yo guys, this last minute dish I cooked today took nothing, so it’s worth sharing it with every wannabe vegetarian or everyone that wants to join the Masterchef TV show. By the way, “What did I eat” is a section which is gonna include dishes I cooked, but that also anyone could cook for me. I’m accepting any invites as long as you don’t put olives ’cause for some reason they make me puke, but I love olive oil!!

I didn’t use any scales, measurements or timers for this, so I advise you to do the same if you wanna get in the show.. I filled up a breakfast bowl with basmati rice while I was waiting for the water to boil, I sliced 1/2 onion and started making it gold by frying her with oil, then (semi-thin) sliced a zucchina just a minute after the onion drop.
I put the spinacios too which I did wash in the sink, teared them in half with my own hands, I washed them so they didn’t stick on the pan and to also add some water, also shave a carrot for extra crispness.

By now the Basmati should be already in the pot (they say it cooks in 15 minutes but it’s all bullshit). On another pan, I scrambled 3 eggs and grinded the 4 season pepper on a butter base.
Get some cooked water from the rice pot and put it into the veggies pot, start pouring the rice, and just get on with the stirring!

(remember the cooked water is so important, it makes the rice absorb the flavour of what your cooking and to also make it nice and slick, so the food goes down your tummy much better).
After that, let it cook on a slow flame for a bit.. Once you see the water got absorbed, you’re done.
Don’t let all the water evaporate though, otherwise it will be super dry and you’re gonna lose the cream!
Turn everything off and just let it settle for a moment..
To add the extra flava I prepared 2 avocados in a bowl, squeezed a lemon and sliced the other 1/2 onion!
at the end of everything, once Basmati was on the plate, I put the avocado mix and stirred the ting again.
The serving is for two people but with some extra, so you could eat it again for dinner or something..

What did I eat? – Salmon Pasta

It’s been already two weeks my girlfriend arrived here in Catania and you know how it is with girls.. They love cooking. So we experimented this dish!
We sliced a couple of pieces of garlic, poured some Sebbifilms olive oil in the pot, and turned on the flame.
Once garlic was starting to get gold, we put in the tomatoes and the zucchini, then 300 grams of salmon. We also kept it Michelin and poured a little bit of Freschello, it was about 400-500 grams of pasta. Parmisan and Pepper were there too so we also squeezed a lemon while cooking but we also put it after, once pasta got served on the plate basically.
